# Dona Francisca and Oscar Chacon of Las Lajas are 3rd generation coffee producers managing their micro mill and farms near the Poas volcano in Costa Rica's Central Valley. The Cumbres del Poas name reflects their location at the volcano's summits. Oscar's grandparents founded Las Lajas in 1948. After inheriting the farms, Oscar and Francisca began processing coffee at their mill in 2000, specializing in honey processed coffee. The Chacons prioritize quality specialty coffee and environmental sustainability. They measure brix content to determine optimal harvest times for sweetness and minimize water usage by avoiding washed processing. They're preparing their four children to eventually take over the family business.

Full of character and nuance. This coffee is both simple and complex, immediately after brewing it presents notes of strawberry, but as you let it cool the complexity grows.
